coconut tea cake



to have passed my 'keep' test for what... a freaking sixteen years? you know you have to be undeniably wonderful. dorie greenspan's sweet times is THAT good. sadly, this 1991 book is out of print, but she has a new one out...if you can get your claws on sweet times, just do it.

it is still raining & i have been washing & folding clothes, baking and cleaning. boothe had his girlfriend over for the day yesterday---i adore her & her freethinking mind and hope her mother doesn't notice that she is gone when we pack her up and take her with us to new york. dude, you have taste. that's all i'm saying.

well, i am off to fold more clothes and watch a movie, but i leave you with this.

coconut tea cake

2 c. flour
1 t. baking powder
1/4 c. butter
1 c. coconut milk
4 large eggs
2 c. sugar
1 t. vanilla
3/4 c. shredded coconut

oven to 350 degrees. butter & flour a tube pan (i double the recipe and use two loaf pans.)

sift the four & baking powder together and set aside. heat the butter & coconut milk in a saucepan until the butter is melted. put the eggs & sugar in a mixer and beat for two minutes. beat in the vanilla. gradually add the flour/bakingpowder mixture. add the coconut and after everything is mixed, add the butter & milk mixture. mix well and fold into the prepared pan.

bake for an hour until a toothpick comes out clean. cool for ten minutes and unmold on a rack.

Delectable! It didn't fit in my loaf pan so I made 6 cupcakes with the left overs. Thanks, Miz D!
