brie & mascarpone


i squeezed in a trip to central market yesterday & was inspired to make this cheesethang. central market is the closest to dean & deluca, zabar's or balducci's that we get down here in san antonio.

i lined a loaf pan with plastic wrap and cut an entire brie wheel into pieces to fit the bottom. sprinkled chopped pecans over the brie and then spread fresh mascarpone over the nuts. (sigh. i will miss our pecan tree.) the mascarpone was then topped with loads of chopped dried apricots, pears and cranberries. i topped it with waxed paper and got another loaf pan and pressed the cheese concoction down evenly & heavily. then chilled it for an hour before turning it out of the pan & removing the plastic wrap.

one half is for tomorrow night and one is for today. i cannot wait for cheese&cracker:thirty.

My two favorite cheeses squished together into a sumptious concoction. People can be driven mad by food like this, you know.

P.S. Have you tried tearing pieces of brie and throwing it into your hot pasta (which you have sauced with a tomato sauce), then toss and let melt?

This looks so scrumptous! I love brie...I love dried fruit...and most of all, being the pure southern girl that I am, I love those fresh pecans! They are beautiful! Bet it tasted as wonderful as it looked!
