soup du jour

butternut squash soup

sometimes, it takes seeing a photo of soup to remind you to buy a butternut squash and it couldn't have happened on a better day than yesterday. it is cold here in south texas. i had been inspired by my friend amy's soup...i flipped it a bit and sauteed shallots with the onions (just sliced onions, not diced) and it was still wonderful. it would have been perfect with crumbled mexican fresh cheese, but queso quesadilla was just fine. (just in case you forget to add the cream or thyme, too, i am hear to report that it is still muy delicioso!)

after a full day of work, it was one of those days that to cook, clean up, get things ready for the next day and get in bed with a book and a cup of tea was sound agenda.

Soup is divine! And could that be sangria in the glass....or just plain ole sweet tea? lol Either way, your agenda applies to my entire LIFE at this moment...but this too shall pass. =o] A cuppa tea and my books are my BFF's!

Cold here too, and we might get some snow, but they are talking 8" so that means it is going South of us for sure. We did see flurries on Wednesday. :) I think it's a French Onion Soup weekend for me. ;-)

Yay! You made the soup! I have to say it tastes yummy even after being frozen and then reheated-and just as good without the cream! I brought it to lunch twice this week and got several comments! The color is amazing!!

Driving home in the first sleet-and-snow of the season, I had determined to make soup too, along with grilled cheese. What fun to check in here tonight and find out how many of us are thinking alike! I'm gonna surely try Amy's Butternut Squash soup (thanks, Amy!)
